Directions
Put your oven rack in the middle position and heat to 400 degrees F (200 C). Add the oil and garlic to a cast iron pan and heat over medium high heat. Fry the garlic until it just starts to turn brown around the edges.
Add the pimentón, and stir to combine. Add the shrimp in a single layer, and then sprinkle with salt and pepper. Put the pan in the oven and cook until the shrimp is pink and opaque all the way through (about 2-3 minutes).
Remove the pan from the oven and sprinkle with the parsley. Toss the shrimp to coat with the oil and serve with bread.
Here are a few variations you can try for your shrimp dish:
- Spicy Garlic Shrimp: Add some red pepper flakes or diced fresh chili peppers when frying the garlic for an extra kick.
- Herbed Shrimp: Incorporate fresh herbs like thyme or oregano along with the parsley for a more aromatic flavor profile.
- Citrus Shrimp: Squeeze some fresh lemon or lime juice over the shrimp right before serving to add a zesty brightness to the dish.
- Creamy Garlic Shrimp: After cooking the shrimp, add a splash of cream or a dollop of sour cream to create a rich, creamy sauce.
- Asian-Inspired Shrimp: Replace the olive oil with sesame oil and add soy sauce, ginger, and green onions for an Asian twist.
